- 2 pounds bone-in chicken thighs
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 2 teaspoons garlic salt divided
- 1 ½ teaspoons cumin divided
- 2 Tablespoons olive oil
- 2 teaspoons minced garlic
- ½ cup diced onion
- ½ cup diced red bell pepper
- 1 cup basmati rice rinsed and drained
- 2 Tablespoons tomato paste
- 3 ½ cups chicken broth
- 5.75 ounces pimento stuffed olives drained
- 3 bay leaves
- 3 Tablespoons chopped cilantro
- ½ cup frozen peas thawed
Instructions
- In a small bowl, mix together onion powder, black pepper, 1/2 teaspoon of garlic salt, and 1/2 teaspoon of cumin. Use this mixture to season both sides of the chicken thighs.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken thighs skin side down until nicely browned, then flip them and brown the other side. Remove the chicken and set aside without cleaning the pan.
- In the same pan, add garlic, onion, red bell pepper, and rice. Sauté for several minutes until the vegetables are tender.
- Mix in tomato paste, remaining garlic salt, remaining cumin, chicken broth, and olives. Stir well and add bay leaves on top.
- Nestle the chicken thighs back into the pan with the mixture.
- Cover the pan and bring to a gentle boil over medium heat. Cook for 20 minutes, stirring occasionally for even cooking.
- Remove the lid, add cilantro and peas, and stir to combine.
- Replace the lid and cook for an additional 5-10 minutes, until most of the liquid is absorbed.
- Turn off the heat and let it rest for 5 minutes before serving.
Notes
For extra flavor, marinate the chicken thighs with spices for a few hours before cooking.
Feel free to adjust the amount of vegetables and spices according to your taste.
Serve with a side salad for a complete meal.
