Ingredients
Scale
- 1 ripe avocado
- 1/4 cup white wine vinegar
- 1 lemon – juice only
- 1 garlic clove
- 3/4 cup avocado oil
- 2 tbsp agave nectar
- 2 tbsp cilantro (or basil, or parsley)
- coarse kosher salt to taste
Instructions
- Ensure you have a blender or food processor with an opening on top for adding ingredients on the go.
- Halve the avocado, remove the pit and skin, then add the flesh to the blender or food processor.
- Add the white wine vinegar, lemon juice, agave nectar, garlic clove, cilantro, and salt to the blender. Do not add the oil yet!
- Secure the lid and blend, slowly drizzling in the avocado oil while blending. Continue blending for a few more seconds after adding all the oil.
- Check the consistency and taste. If you prefer a thinner dressing, add up to another 1/4 cup of avocado oil and blend again.
Notes
Fresh herbs like cilantro, basil, or parsley can be used based on your preference.
This dressing can be adjusted for salt to fit your taste.
Store any leftover dressing in the refrigerator for up to a week.
