- 12 crispy corn taco shells
- 1 pound lean ground beef
- ½ cup salsa OR tomato sauce
- 3 tablespoons taco seasoning, homemade or store-bought
- 1 (15-ounce) can black beans, rinsed & drained
- 1 ½ cups shredded cheese
- Your favorite taco toppings such as salsa, sour cream, queso, shredded lettuce, pico de gallo, diced tomatoes, diced onions, cubed or sliced avocado, pickled jalapeños, fresh cilantro, squeeze of fresh lime juice, etc.
Instructions
- Preheat oven to 375°F and arrange racks to the center position.
- Place taco shells upright in a baking dish or on rimmed baking sheets.
- In a skillet over medium heat, brown the ground beef and drain any excess grease.
- Stir in the salsa or tomato sauce and taco seasoning, then add black beans; simmer for 5 minutes until thickened, stirring occasionally.
- Spoon the beef mixture into the taco shells, filling the bottoms generously.
- Top the filled taco shells with shredded cheese.
- Bake for 10 to 12 minutes until cheese is melted.
- Serve with your favorite toppings for a fresh finish.
Notes
Feel free to use ground turkey or chicken for a lighter option.
Customize toppings to suit your taste preference—avocado and pico de gallo are excellent choices!
