- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 2 cups all purpose flour
- 1 1/2 teaspoons salt
- 2 teaspoons baking powder
- 2 cups fresh blueberries
- 2 tablespoons butter, softened
- 1/4 cup brown sugar
- 1/4 cup flour
Instructions
- Preheat the oven to 350˚F.
- In a large bowl, cream together the softened butter and sugar. Mix in the eggs and vanilla extract, then blend in the buttermilk.
- Stir in 1 cup of flour along with salt and baking powder. Mix well, then add the remaining cup of flour until just moistened. Gently fold in the fresh blueberries.
- To prepare the streusel topping, combine the softened butter with brown sugar and flour until the mixture is crumbly.
- Grease a 2-quart baking dish and evenly spread the batter inside. Top it off with the streusel mixture. Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, allow the cake to cool for 15-20 minutes before cutting it into 12 pieces. Serve and enjoy!
Notes
Make sure the butter is softened for easy mixing.
For the best flavor, use fresh blueberries; frozen can be used but may alter the texture slightly.
