- 2 Tablespoons (28ml) olive oil
- 5 ounces pancetta diced
- 1 pound (454g) sweet Italian sausage casing removed
- 1 pound (454g) ground beef
- 6 cloves garlic minced
- 1 large yellow onion finely diced
- 1 medium carrot finely diced
- 4 Tablespoons (56g) tomato paste
- 1 cup (227ml) white wine or red wine
- 1 28 ounce can crushed tomatoes with basil
- 1 cup (227ml) beef stock
- 2 teaspoons granulated sugar
- 1/2 cup fresh basil chopped
- 1/2 cup (113ml) heavy cream
- 1/4 teaspoon ground nutmeg
- pasta such as spaghetti or tagliatelle
Instructions
- Heat a large saucepan over medium heat, then add olive oil and pancetta. Cook for 5 to 6 minutes, stirring occasionally, until browned.
- Incorporate the sweet Italian sausage and ground beef, breaking it apart with a wooden spoon. Cook until meat is browned and no pink remains, around 5 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant. Add the diced onion and carrot, cooking for another 6 to 8 minutes until the onion softens and becomes translucent. Mix in the tomato paste.
- Pour in the wine, stirring to combine and cooking for 5 minutes. Then add 1/2 cup of beef stock and the crushed tomatoes, stirring well to combine.
- Bring the sauce to a boil, reduce to medium-low heat, and simmer for 2 hours, adding the remaining beef stock gradually as the sauce thickens.
- After cooking, stir in sugar and chopped basil, and cook for an additional 5 minutes. Adjust seasoning with salt and pepper, starting with 3/4 teaspoon salt and 1/2 teaspoon pepper.
- Reduce heat to the lowest point and slowly whisk in the heavy cream while stirring constantly. Then whisk in ground nutmeg. Remove from heat and let the sauce rest for 5 minutes before serving.
- Serve over your choice of pasta, ravioli, or gnocchi.
Notes
Feel free to use a mix of meats for a different flavor profile, like lamb or turkey.
For extra depth, consider adding a bay leaf during simmering and removing it before serving.
