Ingredients

Scale
  • 1 pound ground beef
  • 1/3 cup buffalo wing sauce
  • 8 (6 inch) flour tortillas
  • 1 cup thinly sliced lettuce
  • 1/3 cup chopped celery
  • 1/2 cup julienned or shredded carrot
  • 1/4 cup prepared blue cheese dressing
  • 1/4 cup blue cheese crumbles
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Heat a large skillet over medium-high heat and add the ground beef. Cook until it is no longer pink, breaking it apart as it cooks.
  2. Once the beef is cooked, stir in the buffalo sauce and let it cook for an additional minute.
  3. If you prefer, char the tortillas over a gas stove or warm them in a dry pan.
  4. To assemble the tacos, place some beef mixture onto each tortilla, then top with lettuce, celery, and carrots. Drizzle with blue cheese dressing, sprinkle with blue cheese, and serve.

Notes

Feel free to add toppings such as diced tomatoes or avocado for added flavor and texture.
These tacos can be made ahead of time and heated up for a quick meal.
For a spicier kick, consider adding sliced jalapeƱos or hot sauce.
