- 4 chicken cutlets
- 1 tablespoon taco seasoning
- 9 (6-inch) corn tortillas cut into strips
- oil for frying
- 1 medium yellow onion chopped
- 3 cloves garlic, minced
- 1½ cups frozen corn
- 1 (15-ounce) can black beans rinsed and drained
- 1 (10-ounce) can Rotel Tomatoes with Green Chilies
- 1 cup sour cream
- 2 cups Mexican cheese blend, divided
- 1 medium avocado, peeled, seeded, and diced
- 1 cup cherry tomatoes, halved
- ⅓ cup chopped fresh cilantro
Instructions
- Preheat the oven to 375 degrees and spray a 9×13-inch baking dish with non-stick baking spray.
- Sprinkle taco seasoning on both sides of the chicken cutlets. Heat 1½ tablespoons of oil in a large skillet over medium heat and cook the chicken until browned and cooked through, reaching an internal temperature of 165 degrees. Remove and plate the chicken.
- In the same skillet, add oil to create a depth of about ⅓ inch and fry the tortilla strips for 1-2 minutes until lightly browned, flipping halfway through. Drain on paper towels.
- Remove excess oil from the pan, leaving 1 tablespoon. Heat the remaining oil over medium heat and sauté the onion until soft. Reduce heat to low, add garlic, and cook for 1 minute.
- Dice the cooked chicken. In a large bowl, mix chicken, onion mixture, corn, black beans, Rotel tomatoes, sour cream, and half the cheese blend. Spread half this mixture at the bottom of the prepared dish, follow with half of the fried tortilla strips, and then the remaining chicken mixture. Top with the remaining tortilla strips and cheese.
- Bake for 20-25 minutes until cheese melts and casserole is warmed through. If browning too quickly, loosely cover with aluminum foil. Top with cherry tomatoes, avocado, and cilantro before serving.
Notes
Feel free to customize with your choice of vegetables or spices.
This casserole can be made ahead and refrigerated before baking. Just add a few extra minutes to the cooking time.
