- 4 large eggs
- 3 tbsp unsalted butter, melted (plus more for cooking)
- Pinch of salt
- 2 cups all-purpose flour
- 1 cup whole milk
- 1 cup water
- for serving, pick your favorites:
- Melted butter + powdered sugar + fresh strawberries or berries
- Jam or Nutella
- Cream cheese filling
- Savory: ham and cheese, or mushroom and cream sauce
Instructions
- Blend eggs, melted butter, salt, flour, milk, and water on medium-high for 30 seconds until smooth.
- Rest the batter at least 15 minutes at room temperature (or overnight in the fridge for best results).
- Heat a nonstick skillet over medium heat, brushing it lightly with butter.
- Pour approximately 3 tablespoons of batter into the center; tilt and swirl the pan immediately to spread it into a thin circle.
- Cook for 60–90 seconds until the edges are dry and pulling away. Flip and cook for an additional 20–30 seconds.
- Slide onto a plate and repeat, greasing the pan every 2–3 crepes.
Notes
For best results, allow the batter to rest longer in the fridge.
Experiment with different fillings to suit your taste.
Clean the skillet with a paper towel between batches for a better cooking surface.
