  • 1 pound challah bread (cut into 1-inch cubes)
  • 8 ounces brick-style cream cheese (cut into 1-inch cubes)
  • 1 and 1/4 cups milk
  • 1 cup heavy cream
  • 6 large eggs
  • 4 large egg yolks
  • 2 teaspoons pure vanilla extract
  • 1 cup light brown sugar (packed)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon espresso powder (optional)
  • 1 cup confectioners' sugar (sifted)
  • 1/4 cup maple syrup (plus more for serving)
  • 3 Tablespoons milk
  • 1 teaspoon pure vanilla extract


Instructions

  1. In a medium bowl, mix together flour, brown sugar, salt, and cinnamon. Stir in melted butter until just combined.
  2. Let the mixture sit aside to absorb the butter until ready to use.
  3. Lightly grease a 9×13-inch baking dish with nonstick spray.
  4. Add the bread cubes to the prepared baking dish and set aside.
  5. In a large bowl, combine milk, cream, eggs, yolks, vanilla, brown sugar, cinnamon, and espresso powder. Beat until well mixed.
  6. Pour this mixture over the bread cubes. Distribute cream cheese cubes evenly over the top.
  7. Sprinkle the crumb topping evenly across the casserole. Cover with aluminum foil and refrigerate for at least 4 hours or overnight.
  8. When ready to bake, preheat the oven to 350°F.
  9. Let the casserole sit at room temperature for 15 to 30 minutes.
  10. Bake covered for 30 minutes, then uncover and bake for an additional 30 to 35 minutes until golden brown and firm in the center.
  11. Prepare the glaze by whisking together confectioners' sugar, maple syrup, milk, and vanilla; adjust milk for desired drizzle thickness.
  12. Drizzle the glaze and extra maple syrup over the casserole before serving.
