Ingredients
Scale
- 4 eggs, medium, free range
- 300 ml (1.3 cups) milk
- 2 tsp vanilla extract
- 1 tsp cinnamon
- 60 g (2 oz) butter, for frying
- 8 thick slices of brioche
- Maple syrup and berries
Instructions
- Whisk the eggs, milk, vanilla extract, and cinnamon in a wide bowl or baking tray to create the egg mixture.
- In a large frying pan, heat half the butter over medium-high heat until melted.
- Dip each slice of brioche in the egg mixture for a few seconds on each side, then place it in the hot pan.
- Cook for about 30 seconds until the first side is crispy and golden, then carefully flip and cook the second side. Add the remaining butter when you flip the slices over.
- Serve hot topped with a drizzle of maple syrup and fresh berries.
Notes
Adjust the cinnamon to taste if you prefer a deeper flavor.
For a richer taste, use whole milk instead of low-fat milk.
Soak the brioche briefly to allow it to absorb the egg mixture without getting too soggy.
