Ingredients
Scale
- 2 ½ cups good-quality vanilla ice cream, slightly softened
- 1 cup fresh lemon juice (about 4–5 lemons)
- ¾ cup granulated sugar
- 1 ½ cups ice
- 2 –4 tablespoons cold water (as needed for blending)
- pinch of salt
Instructions
- Add the lemon juice, sugar, and a pinch of salt to a blender and blend briefly until the sugar is mostly dissolved.
- Add the ice cream and ice. Blend until smooth, thick, and creamy, stopping to scrape down the sides if needed.
- If the mixture is too thick to blend smoothly, add cold water a tablespoon at a time until it reaches a thick, milkshake-like consistency.
- Taste and adjust—add a little more sugar for sweetness or a splash more lemon juice for extra tang.
Notes
For a sweeter drink, increase the amount of sugar gradually to suit your taste.
Ensure the vanilla ice cream is slightly softened for easier blending.
Fresh lemon juice really enhances the flavor, so avoid bottled juice if possible.
