- 1 large garlic bulb
- 1 tsp olive oil or avocado oil
- 1/4 tsp kosher salt
- 1/2 cup unsalted butter softened
- 1 tsp chopped fresh rosemary
- 1 tsp chopped fresh chives
- 1 tsp chopped fresh parsley
- 1/4 tsp salt plus additional as needed
- 1/4 tsp black pepper plus additional as needed
Instructions
- Preheat the oven to 350° F.
- Cut the bottom of the garlic bulb and discard it. Place the cut side up on a piece of aluminum foil.
- Drizzle olive oil over the garlic and sprinkle lightly with kosher salt. Wrap the foil tightly around the garlic bulb and place it in a pan.
- Bake the garlic for 40-60 minutes until soft and golden brown. Once baked, let it cool for 20-30 minutes by loosening the foil.
- Chop the rosemary, chives, and parsley, adding them to a medium bowl. Squeeze the roasted garlic into the bowl, along with softened butter, kosher salt, and black pepper.
- Mash the mixture until well combined. Adjust salt according to your taste, adding a little more if necessary.
- Serve immediately or chill in an airtight container until ready to use.
Notes
Fresh herbs enhance flavor, feel free to substitute or add your favorites.
Store any leftovers in the refrigerator for up to one week. Allow to come to room temperature before using for easiest spreading.
