- 1-½ – 2 teaspoons sea salt OR kosher salt
- 2 teaspoons cracked black pepper
- 1 teaspoon sweet paprika
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- cayenne pepper or chili powder (optional and to taste)
- 1 tablespoon light or dark brown sugar
- 4 bone-in or boneless pork chops (each ~1 inch thick)
- vegetable and olive oil (as needed)
Instructions
- Preheat your grill, allowing about 20 minutes from preparing the spice rub to grilling. Start the grill if it takes longer than 10 minutes to heat.
- In a small bowl, combine all seasonings to create the spice rub.
- Pat the pork chops dry with paper towels.
- Rub the spice mix generously over the pork chops, making sure to coat all sides. Allow them to rest for 10-15 minutes.
- Heat the grill to high if it’s not already and oil the grate with vegetable oil.
- Drizzle the pork chops lightly with olive oil on both sides. Sear them over high heat for 2 minutes on each side. Then move to indirect heat, reducing to medium. Close the grill and continue grilling for 4-10 minutes, checking regularly to avoid overcooking. The pork chops should reach an internal temperature of 145°F.
- After grilling, allow the pork chops to rest for 5-8 minutes before serving.
Notes
Bone-in pork chops yield better results as they are less prone to overcooking.
Ensure the grill is well-oiled to prevent sticking during cooking.
Check the temperature of the pork chops regularly to maintain juiciness.
