Ingredients

  • 6 large eggs
  • 1/4 cup heavy cream
  • 1 teaspoon kosher salt
  • freshly cracked black pepper
  • 1 tablespoon salted butter
  • 1/2 small yellow onion about ½ cup, finely diced
  • 2 cups cubed ham about 1/2” cubes
  • 1 cup freshly shredded swiss cheese
  • sliced green onion or chives for garnish


Instructions

  1. Preheat the oven to 375°F.
  2. In a bowl, whisk together the eggs, heavy cream, salt, and several pinches of black pepper until well blended and slightly frothy. Pat the ham dry with paper towels if necessary.
  3. In a 10-inch oven-safe nonstick skillet, melt the butter over medium heat. Add the onion and cook until softened, about 3 to 4 minutes.
  4. Stir in the ham and cook for 1 to 2 minutes to warm it through.
  5. Pour the egg mixture into the skillet and gently stir once or twice to mix the ingredients evenly. Sprinkle the cheese on top.
  6. Cook without stirring for 2 to 3 minutes, until the edges start to set.
  7. Carefully transfer the skillet to the oven and bake for 12 to 15 minutes, until the center is set and slightly puffed. Check after 10 minutes.
  8. Remove from the oven and allow to rest for 5 minutes. Run a spatula around the edges, then slice and serve directly from the pan or transfer to a serving plate. Garnish with sliced green onion or chives and serve hot.
