Ingredients

Scale
  • 5 egg yolks
  • 3/4 cup sugar
  • 2 tsp key lime zest
  • 1/2 cup key lime juice
  • 1/8 tsp salt
  • 4 tbsp butter

Instructions

  1. In a heatproof bowl, combine egg yolks, sugar, key lime zest, key lime juice, and salt, whisking together until smooth.
  2. Set the bowl over a double boiler and cook on medium-low heat. Stir constantly for about 5 to 7 minutes, or until the mixture thickens.
  3. Once thickened, remove the bowl from heat and incorporate the butter, stirring until the mixture is smooth and creamy.
  4. Pour the curd into a jar, let it cool to room temperature, and then refrigerate until set.

Notes

Ensure constant whisking while cooking to avoid curdling the egg yolks.
For a more intense flavor, use fresh key limes instead of bottled juice.
This curd can be used in a variety of desserts or simply as a spread.
