  • 1 medium yellow onion (finely diced (about 1 cup))
  • 3 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1 cup uncooked orzo pasta
  • 2 teaspoons fresh lemon zest
  • ⅓ cup dry white wine
  • 2-½ cups chicken broth (plus more as needed)
  • ⅔ cup heavy cream
  • 1 teaspoon cornstarch
  • 2 cups shredded cooked/rotisserie chicken
  • 2 cups fresh baby spinach
  • ½ cup freshly grated parmesan cheese
  • ½ (5.3-oz) block Garlic Herb Boursin Cheese (diced)
  • 1 tablespoon cold butter (diced)
  • 2-3 tablespoons fresh lemon juice
  • salt & cracked black pepper (to taste)


Instructions

  1. Prep: Prepare your ingredients and use a deep lidded pan (about 3.5-4 quarts).
  2. Sauté onion: Heat the pan over medium heat. Add the olive oil and onion, cooking until softened for about 6 minutes.
  3. Toast aromatics and orzo: Stir in the garlic, Italian seasoning, orzo, and lemon zest. Sauté for 1-2 minutes, stirring constantly. Pour in the white wine and simmer for 1 minute.
  4. Cook orzo: Add the chicken broth and bring to a boil. Reduce to a simmer, stirring often, for about 10 minutes until the orzo is al dente. Add more broth if needed for a saucy consistency.
  5. Add cream, chicken, and spinach: Reduce heat to medium-low. Whisk the cream and cornstarch together, then stir into the orzo along with chicken and spinach. Heat until the spinach wilts and chicken is warm.
  6. Add cheese and finish: Turn off the heat. Stir in parmesan, Boursin, and cold butter. Let sit covered for 2-3 minutes, then stir in lemon juice and adjust texture with extra broth or cream if needed. Season with salt and pepper. Serve immediately.

Notes

Using rotisserie chicken can save time for a quick meal.
Feel free to adjust the amount of lemon juice to taste for additional brightness.
Add more broth gradually if the orzo appears too dry during cooking.
