Ingredients

Scale
  • 3 cups (600 g) granulated sugar
  • ¾ cup (1 ½ sticks / 170 g) unsalted butter
  • ⅔ cup (168 g) evaporated milk
  • 1 tablespoon light corn syrup
  • 1 bag (11 ounces) white chocolate chips
  • 1 jar (7 ounces / 198 g) marshmallow fluff, or marshmallow creme
  • 1 tablespoon lemon extract
  • 3 to 5 drops yellow gel food coloring, or enough to reach your desired shade of yellow

Instructions

  1. Line a 9×13-inch baking dish with parchment paper, allowing an overhang for easy removal, and set aside.
  2. In a large saucepan over medium heat, mix together sugar, butter, evaporated milk, and corn syrup. Heat until the mixture reaches a gentle boil.
  3. Once boiling, stop stirring and allow it to boil without interruption until reaching 234°F (soft-ball stage) on a candy thermometer, approximately 5 minutes. If sugar crystals form, gently brush them down with a wet pastry brush. Remove from heat.
  4. Let the mixture sit for 1 to 2 minutes, then mix in the white chocolate chips until fully melted and smooth.
  5. Add marshmallow fluff and beat until well combined and creamy; avoid overmixing.
  6. Set aside 1 cup of the mixture in a small bowl for later. Stir the lemon extract and yellow gel food coloring into the remaining mixture until it reaches an even shade.
  7. Pour the lemon-tinted mixture into the prepared pan, spreading it out evenly. Drop spoonfuls of the reserved white mixture on top and swirl with a knife or skewer to create a marbled effect.
  8. Allow the fudge to cool at room temperature for about 2 hours, or refrigerate for 1 to 2 hours. To set more quickly, freeze for 30 minutes.
  9. After the fudge has set, lift it from the pan using the parchment overhang and cut into squares.

Notes

For a more intense lemon flavor, add additional lemon extract.
Store the fudge in an airtight container to keep it fresh and chewy.
Cut into smaller pieces for a more manageable treat during gatherings.
