Ingredients

Scale
  • 2 Tablespoons olive oil
  • 2 teaspoons minced garlic
  • ½ cup diced onion
  • 1 cup long grain white rice rinsed and drained
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 2 Tablespoons tomato paste
  • 2 cups chicken broth

Instructions

  1. Heat olive oil in a skillet over medium-high heat until shimmering.
  2. Add garlic and onion to the oil in the skillet and sauté for a minute or two.
  3. Add the rinsed and drained rice and sauté for 4-6 minutes or until the rice begins to lightly brown.
  4. Sprinkle on the salt and pepper, then add the tomato paste. Stir well to combine.
  5. Pour in the chicken broth and stir again. Bring to a boil, then reduce heat to low and let it simmer, covered, for 20-25 minutes until most of the liquid is absorbed.
  6. Leave the lid on, turn off the heat, and let it sit until most of the remaining liquid has been absorbed.

Notes

Use low-sodium chicken broth for a healthier option.
For added flavor, consider mixing in vegetables like peas or bell peppers during cooking.
Make it a complete meal by adding grilled chicken or shrimp on top.
