- 4 large chicken breasts (boneless and skinless)
- salt and pepper (to taste)
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 1 teaspoon dried thyme
- 1½ cup cremini or white mushrooms (sliced)
- 4 slices Swiss cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Create a pocket in each chicken breast by cutting along the side, being careful not to cut all the way through. Season both sides and the inside with salt and pepper.
- In a skillet over medium heat, add 1 tablespoon of olive oil, garlic, and mushrooms. Cook until the mushrooms are browned, approximately 5 minutes. Stir in thyme and season with salt and pepper. Remove from heat and allow to cool slightly.
- Stuff each chicken breast pocket with the mushroom mixture, then add a slice of Swiss cheese into each pocket. Use toothpicks to secure if needed.
- In the same skillet, heat the remaining olive oil over medium-high heat. Sear the chicken breasts until golden, about 3 minutes on each side.
- Transfer the skillet to the oven, or if using a baking dish, place the chicken breasts in it. Bake for 20 minutes or until the chicken is fully cooked, reaching an internal temperature of 165°F (74°C).
- Allow the chicken to rest for a few minutes before serving to retain the juices. Serve hot, garnished with extra thyme if desired.
Notes
Feel free to substitute the Swiss cheese with your favorite cheese variety.
For added flavor, consider marinating the chicken breasts in herbs and spices for a few hours before cooking.
