- 5 ounces spaghetti
- 4 slices bacon, cooked and chopped
- 1 teaspoon olive oil
- 2 garlic cloves, minced
- 2 medium eggs
- 3/4 cup grated parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt, to taste
- Black pepper, to taste
Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti according to package directions. Reserve 1/2 cup of pasta water, then drain.
- In a bowl, whisk together the eggs and Parmesan cheese until well blended.
- Heat the olive oil in a large pan over medium heat, then add the minced garlic and cook for 30 seconds to 1 minute until fragrant.
- Add the cooked bacon and drained pasta to the pan, tossing everything together.
- Remove the pan from the heat and quickly stir in the egg and Parmesan mixture until the pasta is well coated.
- If the sauce is too thick, add a little reserved pasta water to achieve a creamy consistency.
- Season with salt and black pepper to taste, and finish with chopped parsley and additional Parmesan if desired. Serve immediately.
Notes
For extra creaminess, ensure to mix the egg and cheese quickly off the heat to prevent scrambling.
Feel free to adjust the amount of garlic based on your preference for a stronger or milder flavor.
