Ingredients

  • 1 broccoli crown clean, pat dry, and cut into bite-sized pieces
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • ¼ cup Parmigiano cheese fresh-grated
  • 2 tbsp roasted pine nuts


Instructions

  1. Preheat the oven to 425 °F.
  2. Line a cookie sheet with a silicone mat and set aside.
  3. Cut the broccoli into bite-sized pieces and place in a large mixing bowl.
  4. Pour the olive oil and lemon juice over the broccoli.
  5. Using two large spoons, toss to coat each piece thoroughly.
  6. Sprinkle garlic powder, salt, and pepper over the broccoli and mix well.
  7. Transfer the seasoned broccoli to the prepared cookie sheet, spreading it evenly.
  8. Bake for 15-18 minutes until the broccoli is tender and lightly browned.
  9. Sprinkle with freshly grated cheese and pine nuts before serving.

Notes

For extra flavor, add some red pepper flakes for a bit of heat.
