- 1¼ pound pork tenderloin or pork loin cut into bite-sized pieces
- 1 egg beaten
- 1 tablespoon soy sauce
- 1 tablespoon canola oil or vegetable oil
- 2 cloves garlic minced
- 1 tablespoon fresh grated ginger
- 1 cup low sodium chicken broth
- ⅓ cup pineapple juice
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- ¼ cup ketchup preferably organic
- 2 tablespoons brown sugar
- ⅛-¼ teaspoon red pepper flakes to taste
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- ¼ cup cornstarch
- 1 tablespoon flour
- 3 tablespoons canola oil or vegetable oil
- 2 stalks celery chopped
- 1 red bell pepper chopped
- 1 yellow or orange bell pepper chopped
- 1 green bell pepper chopped
- ½ pineapple cored and cut in chunks
- 2 green onions chopped
Instructions
- Combine pork, egg, and soy sauce in a medium bowl or storage bag. Allow to marinate for 30 minutes.
- Heat 1 tablespoon of oil in a saucepan over low heat. Sauté garlic and ginger for 1 minute, then mix in chicken broth, pineapple juice, soy sauce, rice vinegar, ketchup, brown sugar, and red pepper flakes, if using. Simmer for 10 minutes.
- Whisk 1 tablespoon cornstarch with 2 tablespoons cold water and mix into the sauce, cooking until slightly thickened for 2-3 minutes. Remove from heat.
- In a medium bowl, combine ¼ cup of cornstarch and flour.
- In a heavy skillet, heat 2 tablespoons of oil over medium heat. Remove pork from marinade and coat in the cornstarch mixture, frying for about 2 minutes on each side until cooked through, in batches to avoid overcrowding.
- Carefully clean the skillet and add 1 tablespoon of oil over medium heat. Cook celery and bell peppers for about 4-5 minutes until just soft.
- Add pineapple and continue cooking for an additional 1-2 minutes. Combine the cooked pork and sauce in the skillet, heating through for 1-2 minutes before serving.
Notes
For added spice, adjust the amount of red pepper flakes to your liking.
