- 1 lb. ground beef
- 2 tbsp. tomato paste
- 2 tbsp. taco seasoning (or one 1 oz. packet)
- 4 cups beef broth
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1 (14 oz.) can diced tomatoes
- 1 (4 oz.) can diced green chiles
- 1 and 1/2 cups frozen corn
- 1 (15 oz.) can pinto beans, drained
- 1 (15 oz.) can black beans, drained
- optional taco toppings*
Instructions
- Heat a soup pot over medium-high heat and add the ground beef. Brown the meat for about 3-4 minutes, breaking it up as it cooks.
- Lower the heat to medium. Mix in the taco seasoning and let it sit undisturbed for 30 seconds. Then, add the tomato paste and let it sit for another 30 seconds.
- Pour in the beef broth, scraping any bits off the bottom of the pot. Mix in the garlic powder, onion powder, diced tomatoes, green chiles, frozen corn, pinto beans, and black beans.
- Raise the heat to high and bring the mixture to a boil, stirring occasionally. Once boiling, reduce to a simmer and cook for an additional 5 minutes, stirring occasionally.
- Ladle the soup into bowls and serve with your chosen taco toppings.
Notes
Feel free to add any additional toppings you prefer, such as cheese, sour cream, or avocado.
For a spicier kick, consider adding diced jalapeƱos or hot sauce.
