Ingredients
Scale
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 cup diced onion
- 1 cup diced or shredded carrots
- ½ cup diced celery
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth, or stock
- 4 (15-ounce) cans cannellini beans, rinsed & drained, divided
- ¾ teaspoon dried sage
- ¾ teaspoon dried rosemary
- ¾ teaspoon dried thyme
- ¼ teaspoon crushed red pepper flakes
- 1 dried bay leaf
- ¼ cup crème fraiche, or sour cream
- ½ cup freshly grated parmesan cheese
- 1 tablespoon champagne vinegar
- salt and freshly ground black pepper, to taste
- cooked diced pancetta or bacon, croutons, grated or shaved parmesan cheese, fresh chopped parsley
Instructions
- Heat olive oil and butter in a pot or Dutch oven over medium heat until melted. Add onion, carrots, and celery, sautéing until softened, about 5 minutes. Add garlic and cook for 1 more minute.
- Stir in chicken broth, 2 cans of drained beans, sage, rosemary, thyme, crushed red pepper flakes, and bay leaf. Bring to a boil, reduce to simmer, cover, and cook for 20 minutes until vegetables and beans are tender.
- Remove bay leaf and blend soup in the pot until smooth using an immersion blender. Add remaining 2 cans of drained beans, simmer for another 10 minutes while stirring.
- In a bowl, whisk crème fraiche/sour cream with hot soup until smooth, then stir into soup with Parmesan and champagne vinegar. Season with salt and pepper to taste.
- Adjust seasonings as desired and serve hot, garnished with pancetta, croutons, extra Parmesan, or parsley.
Notes
For added flavor, use homemade chicken broth if available.
You can substitute crème fraiche with Greek yogurt for a lighter option.
Serve with crusty bread for dipping.
