- 2 tablespoons honey
- 1 tablespoon light brown sugar
- 1 teaspoon dried thyme
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
- 1½ tablespoons spicy brown mustard
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- In a small bowl, combine honey, light brown sugar, thyme, onion powder, garlic powder, salt, black pepper, and spicy brown mustard.
- Slather half of the glaze over the pork tenderloin using a spoon or a brush.
- On a cutting board, overlap the bacon strips. Roll the pork tenderloin in the bacon, ensuring the seam is down, then apply the remaining glaze over the bacon.
- Bake for 22-25 minutes until the bacon is crispy and the pork reaches an internal temperature of 145 degrees. For extra-crispy bacon, switch the broiler on low for the final 2 minutes. Let the pork rest for 10 minutes before slicing.
Notes
For enhanced flavor, marinate the pork tenderloin in the glaze for a few hours before wrapping it in bacon.
You can substitute maple syrup for honey if you prefer a different sweetness.
Choose thick-cut bacon for a meatier texture.
